You should also try Valse Triste and The Swan of Tuonela... two wonderful, brief tone poems.

Whle I like these pieces, I don't think they satisfy me the same way as the symphonies, and particularly the final (7th), do.

In musical criticism, when issues of craft and technical consideration are set aside, what remains is more subjective. However, until technical issues are dealt with, the subjective portion bears considerably less weight.
