This is strictly subjective but I feel the difference between good music and great music is some sort of emotional connection. It's one thing to hear a sappy piano piece and interpret it as sad. It's quite another to actually *feel* sorrow from it. All of my favorite music is music that moves me in some way. Appealing to the ears makes good music. Appealing to the soul makes great music.
That being said though, I do enjoy Liszt's music despite not really "feeling" anything from it.
