I was trying for a long time to see if the P60 had a phono output, and I can't see if it does. I Imagine there's some sort of output at the back of the keyboard, either a 1/4" jack or two phono outputs... use this over the headphone output, but if you have to use the headphone output just take a cable straight from the piano to the keyboard, and then plug your headphones into the computer. This way: no splitters or connectors.
As for brands, unless you go for really really crummy cable (the cheapest you can find anywhere that's only 1mm thick) you won't hear the difference... just use as few connectors as possible...
