If you have Kontakt player (or possibly GPO) you should be able to save scores as audio tracks, yes. If not, it becomes a significantly more complex question of recording the MIDI playback from Sibelius into WAV format using either Sound Recorder or something more substantial, saving that, then converting it to MP3 using an encoder.
Try Start -> Accessories -> Entertainment -> Volume Control, then Options -> Properties -> Recording, then click OK. Depending on your sound card, you may be able to record MIDI output (or even whatever audio is emanating from the card at any one time) directly. If not, then it's not doable, really.
