Tough question. I'm a total sucker for big Romantic sound, So my favourites right now would probably be Berlioz, Tchaikovsky, Verdi and also Stravinsky (what's not to like about him?)

Here are my favorite Composers, and the pieces I've enjoyed hearing most (in parethesis)

Camille Saint Saens (Danse Macabre), Modest Muggorsky(sp) Pictures at an Exhibition)) , Pyter Tchaikovsky (Violin Concerto in Dmajor), Johannes Brahms (The Hungarian Rhapsodys), Carl Von Weber (Invitation to the Dance), Henryk Wienawski (Violin Concertos in F# minor, and D minor), Chopin (24 Preludes ) ... just to list a few.

Can't pick. If pressed I'd likely answer either Mussorgsky, Shostakovich, Stravinsky, Sakuraba, Brahms, Beethoven, or Bach though.
