I guess it depends on the school you are going to. I assume you are talking about a portfolio for the application and audition process? If you are already in school and looking to graduate, you need to talk to your department for their specific requirements.

Generally, they want to see a variety of scoring, such as a chamber piece, larger ensemble, VOCAL piece, for starters. I am not sure if length or style is really that important for undergrad, as most composers at this point are in their "imitative period" anyway.

I know of some schools that seem to have no requirements, whereas others want ready-to-be-published quality before they will even meet you.

So, it just depends on where you want to go. Do you have a school in mind? Check out their website and see what their requirements are, as it can very greatly.

Don't just look at their website. Even a reputable music school's website tells not even half the story. You need to talk to people at the school. Professors, admissions, anybody you can get the full story from. They'd like to see you at your best, and some of the things that show that aren't always written-out requirements. Phone admissions, e-mail professors. Just start asking them if they'd like to see certain things or not, good communication can't hurt.
