If you have the space on your comp (40gigs+) Eastwest Quantum Leap does a great Orchestra and Choir. Endorsed by Jesper Kyd! Jks but he does actually use it.
The Pirates of Penzance is pretty embarassing for me. Particularly enjoyable/embarassing would be The Model of a Modern Major General, and When I was a Lad.

Hi all,
I recently discovered the joys of composition after working for a couple of years on loop-based sounds, but now it seems like all i can write are very linear pieces with static chord progressions. I have been working towards urban/world/symphonic melds but it doesn't seem to be working out for me. What can i do?
