Performance and timing issue

I have a question. What's the difference in terms of performance when you're writing your composition in Finale Notepad (or other software) VS. you record all that in real-time using Kontakt libraries? I do know that the Kontakt libraries will probably give it a more realistic sounding, but what about the performance... Is it better? Is the timing sheet more precise?

I've been listening to alot of the older RPG composition and the performance is really good. The timing does sound alot different than if one were to perform live, yet still has that nice cheesy feel/performance/timing related to it. I consider myself a composer as well, but I dont write the idea into sheet. I write it on the spot while I'm recording using a midi controller and overdub each instrument one by one in Cubase. Does this method get more messier? I've been really struggling to get my performance to feel tight. I'm going for that RPG feel. So now I'm thinking of writing the sheet first  and render the midi and replace it with my Kontakt libraries and see if it's more accurate in timing. I want that nice cheesy performance (not necessarily the sound quality) but I can't acheive it when i record it in real-time. So i'm thinking maybe it's Finale that fixes the performance beforehand? Can anyone confirm this?
