It depends what you're writing. I know the jazz faculty, but they're also fantastic schools of music, period.:

Berklee

New England Conservatory (Bob Brookmeyer! Ken Schaphorst!)

The New School

Manhattan School of Music

Eastman (Bill Dobbins!)

...just a few of the biggies. Don't limit your scope to just well-known school though, find a professor and environment that works for you.

YOU'RE ALL FORGETTING OBERLIN! One of the BEST conservatories in the country, if not the world.

No, really, it is. Certainly not THE best, but one of. I know for a fact it has the world's best harp program, and until the professor died, the foremost oboe program. Its composition program is extremely well-known in New Music circles, and its graduates are all very successful.

Oberlin is definitely one of the top in the world, I'd say.
