I have used Sibelius for many years (since version 3) and can say that it is by far the best for composers. While Finale has almost every bell and whistle you could want graphically, it is a pain to work with in the compositional process IMO. Sibelius note entry especially is just amazingly streamlined and everything is right at your fingertips. Never tried Lillypond but I've heard horror stories about it.

For me it's a mix of using Sibelius and sometimes sitting with a pen and paper. When I'm writing voices I tend to do it with a pencil, gives me more physical room to think somehow (for me it can get too "superficial" sitting at the computer writing). But most of the time I use Sibelius when I arrange my pieces.
