How do you hide empty parts on a score in Finale?

Just as the title asks, I would like to know how to hide staves in Finale so that, for example during a piano solo I don't have a million bars of rests taking up space on the score.

Use the Page Layout Tool and in its menu choose "Optimize Staff Systems". This will automatically hide empty staves.

It is important however that you only do this at the very end of composing, as the last step. Otherwise, you may end up with hiding some stuff where you actually have something written.
