How do people create songs solely for piano? Whenever I try, it all sounds like a "Learn to Play" tape going over chord progressions...

Anyone have any advice?

well, try creating a melody and then accompanying it in the left hand. Listen to some piano pieces or check out some scores to see what kind of accompaniment things you can do with the left hand.
