The technique is interesting... one hand plucks the strings, the other hand can be used to change the tension on the other side of the bridges - hence vibrato and even large pitch bends (I've heard some that go well beyond a whole step) are possible. The houses are all on water, well for the most part. And those little traditional tunes just always stunned me. It was good that you brought this up, allows me to look back at China. Say, have you heard of Sai Ma? (English: Horse Racing) it's a great piece, with the Erhu solo. I love it.
