Like with his woodwind instruments/ strings

What are those really fast parts where it sounds sort of like a glissando but doesn't go along chromatic scale at least sounding to my ear.

A song in particular I notice this is Clash of Lightsabers from Empire Strikes Back soundtrack. Near the end he uses this technique heavy I especially love the part where the woodwinds are like going up and down up and down along some scale or melody repeated over octave or something.

What kind of technique is this and what kind of note would be used 32nd notes? Also what be best way to compose such things yourself into your own music.
