Studio view (like a piano roll, on one infinite page) is much better - why would you want to see page breaks during the writing process? Optimizing page turns is one of the final steps of preparing a score - and usually you optimize parts, not the conductor's score.

I do use pageview in Finale, but only because that's the only way to get a full score into the window, since studio-view has a limit of 50% zoomout.

BTW, I have 2007c and I've yet to see a reason to upgrade from that. ;)
The Selection Tool (introduced in 2008 and refined in 2009) is a total game changer. It has drastically increased my productivity.

Triplets are fairly simple when you approach them correctly.

If it is just plain vanilla triplets, it's incredibly easy to enter via Speedy Entry. Simply click on the measure to get the Speedy Entry frame, enter your other notes, and right before you enter your triplet, press CTRL+3 (on the numpad). Then enter your triplet. Simple as that. When you press CTRL+3, Finale takes the next three notes you enter and makes them triplets. This is very handy for straight eighth or quarter triplets.

That method also works for sextuplets as well, just hit CTRL+6 (numpad) and enter the six notes. (This may also possibly work with other tuplets, but I've never personally used that).

For mixed triplets (quarter/eighth), my preferred method is to enter the notes first, then go back and use the Tuplet Tool to add the triplet (you'll use the parameters 3 eighths in the space of 2 eighths).

For other types of tuplets, I prefer to enter the notes in Speedy Entry first, then add the tuplet with the Tuplet Tool afterward. Quintuplet sixteenths? Enter the 5 sixteenth notes, select the Tuplet Tool, click on the first sixteenth. In the Tuplet window, specify 5 sixteenths in the space of 4 sixteenths. It's really not that difficult.

I can't help you with Simple Entry, I don't use it at all, sorry. And in Speedy Entry, I always have "Jump to Next Measure" turned off (I use either right arrow key or the "]" key to jump forward a measure).

Finale has ALWAYS had what we call "Scroll view". since before Sibelius even existed.
